Whether you grow your own greens or pick them up in bags at the grocery store, learn how to preserve lettuce so it lasts longer. This easy hack is quick, cheap and prevents wilting or slimy leaves. Depending on the method you choose, this technique can keep leafy greens fresh for a week or more. The key to preserving lettuce is to minimize oxygen, which accelerates rotting. Also, excess moisture is a big culprit. The first step is to remove the container from the bag or plastic wrap and wash it thoroughly, gently swishing the lettuce around in the sink until any grit is rinsed off. Pat dry between paper towels or use a salad spinner to reduce the moisture content.

When you’re ready to use it, transfer the lettuce to an air-tight plastic bag or container. Press out the air, then seal. This will help to avoid bruising the lettuce. Be sure to check the contents regularly, removing and replacing any wilting or spoiled leaves. Then store in the crisper drawer, preferably with the refrigerator’s humidity set higher, to keep the lettuce cool and prevent spoiling. Do not store in the same drawer as other produce like apples, pears and tomatoes, which release ethylene gas that makes the lettuce ripen faster.

You can also revive a bag of pre-washed lettuce or leafy greens by submerging them in cold water, if you notice they’re starting to wilt. Soak for a minute or two, then drain and dry the lettuce before storing. For extra storage space, add a few paper towels to absorb the moisture and keep the lettuce from touching, and replace the papers towels as needed.
